Coffee Cake for Mother's Day

All the girls in my family are off chocolate for lent.  Hard to believe for a group of ladies that are such confirmed choco-holics!  Surprisingly we are doing well, and there have been no major choco cravings or lent lapses.  

Not eating chocolate has sent me in the kitchen and back to the books, to create new recipes, that don't involve this ever so yummy ingredient.  

It is exciting creating new recipes, trying things out, discovering what works well and what doesn't.  My family are a happy nation of baking tasters, and believe me they are a hard lot to please.  I also like to get every guest who comes to visit to try my latest creation, notes are taken on their comments, and eventually a recipe is written, that I can share with you.

One huge hit has been my coffee bunt cake made with wholemeal flour, and frosted with a light cream cheese icing.  Coffee Cake there really is nothing that can beat it, a little hit of caffeine with intense coffee flavour, the nutty bite from the wholemeal flour, the rich moist crumb and a smooth frosting, that just melts in the mouth. Delicious.

It is the simplest of recipes, you literally bung everything into the food mixer, and a few minutes later the batter is ready, pop it into the oven, and  hey presto, the perfect cake emerges  less than half an hour later. Within an hour, you can have the cake baked, iced and placed on the table.

Salt and Sparkle = Life Remarkable


Life can get pretty humdrum. And, it is not even a case of us letting it become that way; it sorta just slips up on us without point or notice.  We get swept away in the suds of a pile of laundry, or a rack of dirty dishes, and before we know it our lives seem flat. Routine. Colourless. They have lost their flavour and shine. And we wonder, will we ever get them back?

In essence when life gets like that all it really needs is a touch of seasoning - a little salt, and a pinch of sparkle to bring back colour, depth and joy.  It never fails to amaze me how the smallest amount of seasoning can change our perspectives from grey to Technicolor. The tiniest tweaks often have the greatest effect.  A little bit of seasoning, a little bit of shine … and things don't look so bad.  

And, the wonderful thing is that all life is extraordinary – whether we are all feelin’ it or not.  Life is full of surprises, and wonders that if we stop for a moment and let them, will literally take our breath away.   These moments for me are the 'salt and sparkle', the flavour, the seasoning, and the colour - the moments that we carry as memories.

With Spring dancing in front of our eyes; the world a light with new life and colour - I don't think could there be a better time to introduce you to Salt and Sparkle?

There’s nothing quite like the smell of freshly baked chocolate chip cookies to bring a hint of sparkle to anyone’s day, so in this my first ever blog post, I feel it is only fitting that I share my favourite cookie recipe with you.  A recipe that yields perfect cookies every time – crunchy and chewy, and oh so chocolately all at once - Hope you enjoy them.
